Made this yesterday. You cook the dried spaghetti in the pan with the sauce, so you get those chewy, charred edges. I'd go heavier on the chili next time. Anyone else made a version?

The trick for me was resisting the urge to stir constantly. You want bits sticking and catching.

Yes! I panicked the first time, then the burnt bits turned out to be the whole point.

Does it work in stainless or do you really need a big nonstick pan?

I use carbon steel. Stainless works if you're comfortable scraping, and you do want a wide pan.
